does nitro content or % really make a differance in the noise?

With higher nitro content with a given prop, yes the engine will make more noise because it's turning at higher RPM.

Sure seemed a lot louder than just a few hundred RPM change today. I was running 25% instead of 15%. 0% nitro has a much softer sound than 15% through the same engine.
I think the exhaust is louder because the charge has more power to it so more excess force is exiting the exhaust. Not too different than going uphill vs level in a car at a given speed.

My Tee Dees are earsplitting with Sig 35. Like 20,000 RPM firecrackers right in front of me.

That being said, I have not compared the difference. I use either Sig 35 or Glowplugboy 24. When I run out of the 35 I'm not going to buy any more, just no need for the extra punishment to my Tee Dees that aren't a dime a dozen any more. From what I've read about it, it's a similar blend to the Sig 25. It has a castor/synthetic mix of oil in it. It should run fine, and the price is right if the shipping is reasonable. Some cities will have hobby shops that sell it. If my local Hobbytown USA can get it I'll try it.
